Today, I have decided to talk about our basic Frushi ingredient – the rice, or more precisely, about the rice leftovers. Does it ever happen to you? That you cook a bit more rice than you should have? If so, you are not the only one. This has always been one of my biggest struggles. And rather than start measuring the amounts, I figured out how to use the rice afterwards. I mean let’s be honest. You don’t always want to have the same meal twice a day, or more days in a row. So why not to use a rice for some healthy dessert?
Below you will find the exact recipe, however, I recommend you to experiment. I also tried more alternatives, and they all were delicious. I believe different people prefer different tastes and different levels of sweetness. So why not to make your own perfect rice bites? Different kinds of dried fruits ( the ones without added sugar), nuts, berries, honey, agave, banana or even protein powder – all fit! The only rule is that the mixture has to be sticky – so you would be able to form the little balls.
Anyways, if you find the recipe interesting but you don’t usually experience this ”rice problem”, you can always cook some extra rice intentionally. And remember that this healthy snack contains mostly carbohydrates. Carbohydrates = energy that needs to be used. 🙂
So here we go:
1. Rice ( I had approximately 250g of cooked rice. I tried short grain rice as well as Jasmin rice and both worked fine. )
2. Dates ( 4 Dates )
2. Shredded Coconut ( 1 tablespoon )
3. Cocoa ( 1 tablespoon )
4. Cinnamon ( 1 teaspoon)
5. Water ( 1 tablespoon)
6. Coconut Oil ( 1 tablespoon – )
First, put the dates into a cup of water for a couple of hours. This will make it easier to blend them. Afterwards, remove the date pits.
Blend the dates, coconut, cocoa, cinnamon water and coconut oil. If you use different ingredients, the only thing to remember is that you need to have a smooth sticky batter at the end.
Mix the rice with the sticky batter. Do not blend. Use a spatula or similar.
Form little balls – bites. Ready! Or not? Totally up to you. You can either leave them like this or bake them for around 10 minutes on 200° to make the outer party crispy. I tried both ways and both worked.
In the end, I topped some of them with dried-frozen strawberries and shredded coconut.
