Hope that all of you enjoy beautiful and sunny vibes in Copenhagen!
In this post, I want to share with you several tips, how it is possible to create tasty outcomes by using only 1 ingredient – coconut!
I always have a canned coconut milk at home. However, I was wondering if is it possible to make it on my own and several weeks ago, I found a coconut in MENY shop and I decided to buy and try to do something with it.
To be honest, I was thinking that it is impossible to do something with coconut without any special tools.
BUT, it is very easy and fast to do it.
TIP: When you buy a coconut, it doesn’t have any cracks and don’t forget to shake it and you will hear a sound like there is a water inside. Also, try to examine the eyes of the coconut for wetness and mold. If these are not completely dry, choose another one.
Simple steps how to open a coconut:
- Use a sharp small knife or a metal skewer to find one of the weakest “eyes” and poke a hole and collect a coconut water to a glass.
Now you have a coconut water 🙂 Usually, it is not a lot, but still, it is very tasty to drink.
2. Follow this easy youtube tip how to open a coconut. I also prefer to use a big knife, but it is possible to use a hammer or a rolling pin.
3. Separates a meat and a shell by using a butter knife. It is not necessary, but you can also pill of thin, brown skill from the meat.
How to make a coconut milk at home?
In order to make a coconut milk, you need to put all collected meat into a blender. I really hope you have a powerful blender 🙂 Don’t forget to add some water, approximately, 200-250 ml of water. You can also add already collected coconut water.
Strain liquid through very fine cheesecloth, pressing out all the liquid you can. You will get around 500 ml of a coconut milk. Notice, you can store it in a fridge only for 3 days.
TIP: I always freeze this milk in ice cubes, so it can stay fresh longer and during hot summer days, it will be a great ingredient for smoothies.
Making coconut flakes and flour
What is left of liquid pressing are coconut flakes. You can dry it on a sun or oven (try to apply a very low temperature not more than 80°C for 30 minutes 2-3 times).
When flakes are dry, you can make a coconut flour. Just use a coffee grinder.
Now it is time to share my favorite recipe by adding created ingredients 🙂
Mix 3 teaspoons of chia seeds with 9 teaspoons of the coconut milk.
Leave this mixture for 1 hour.
Use a blender to mix 1 banana with 200 ml coconut milk.
Add the chia seeds mixture and add approximately 100-150 coconut flour.
